Juice is easy, just sqeeze the apple and there ya go. Now in cider, you
take that juice (only certian apples will work) and ferment it. Nothing
is added. There is enough wild yeast to carry the process and you get
"hard cider" that has upto 7% alcohol, can be less depending upon the
sugar content of the apples.

I used to make lots of cider, it is easy and good. I had a friend that
made "non-acoholic" cider by warming the cider or even storing it open
up in a warm room and allowing the alcohol to evaporate, I never tried
it but he claime dthe alcohol content is less than 1%.

Cider is storeable at room temp, juice needs refridgeration, isolation
and/or lots of good chemicals. 

I doubt there was juice in the day of that Jesus walked the earth due to
the storage problems and this is why I have always wondered about the
"wine" thing. You see grapes do the same thing and normal grapes give
about 8% alcohol while the new hybrid hi-sugar grapes are better for
higher alcoholic content wines.
